NOOR, CÓRDOBA
Chef Paco Morales is one of the most outstanding figures in Spanish gastronomy. Each season, the restaurant’s offer focuses on a different period, and “Currently, it is tackling the Spanish Golden Age through three menus (Mudejar, Moorish, and Al-Jazira) that reinterpret the culinary splendor of the 16th and 17th centuries”.
Among the unique dishes at Noor, we can find the pasta of durum wheat, smoked butter, chicken, and squid (a reinterpretation of the Abbasiya) or the Naranjas del barrio with orange blossom, fried almonds, and extra virgin olive oil, an exquisite dessert.

Led by chef Ángel León, it is known for its innovative approach to seafood cuisine and for being a pioneer in the sustainable use of seafood products.
The chef, totally committed to sustainability, seeks to amaze us with new techniques and ingredients (marine sausages, plankton, bioluminescence, cooked with salt water…), always building his culinary philosophy based on recycling, the use of natural estuaries or the constant defense of discarded fish. The current proposal is based on an infinite sea that exploits above all the resources of the Mediterranean and the Atlantic.
